Our sold out Chocolate & Madeleines Class last Saturday afternoon at Quince was a great success. Chef Andrea demonstrated the tricky and delicate art of making the perfect madeleine - a simple little shell-shaped sponge cake, so cute you want to pinch it. This little treat is a staple in French households, thrown into lunch boxes, brought out for breakfast or afternoon coffee, or dipped in hot chocolate.
